Vanilla & peanut granola

I love this, and so does my soul with fresh fruit & chai seed pudd

2 Cups of Wholegrain Oats

1/2 cup of Peanut butter ( I use Pics)

1/4 cup of honey or maple syrup

1/4 cup of Coconut oil

3 teaspoons of vanilla extract

Pinch of salt

Preheat oven to 180 c. Line a baking tray with baking paper.

Add all ingredients to a large bowl and mix well until combined and a sticky

Spread granola out on to baking tray, in a single layer about 1 cm thick.

Bake for 10 -12 minutes or until golden

Remove from the oven and leave to cool

When cool I am normally cranberries, toasted almonds, shredded coconut, what ever you desire

The granola will keep in an airtight container for 1 month

Enjoy with fresh fruit, greek yogurt, & chai seed pudd

  • Oh la la – make your very own French picnic sandwich. Simply hollow out the inside of a freshly baked sourdough loaf and fill with scrummy sandwich fillings. Cut into slices to see all the goodness of summer laid out in beautiful layers. Oui, s’il vous plait!

  • Salad in a jar – hassle and mess free, simply layer your favourite summer salads in a jar, mixing them up just before you take a bite.

  • Stuffed brie or camembert – forget packing all the individual pastes, nuts and dried fruit for your cheeseboard. Instead stuff your cheese with scrummy combinations such as dried fig and roast hazelnut or pear and walnut, then rewrap in baking paper and tie with twine.

  • Chicken roulade wrapped in prosciutto – when sliced it reveals layers of chicken, herb pork mince and free range boiled eggs. Awesome for a family picnic with a rocket salad on the side.

  • Don’t forget dessert! Pack your tasty dessert in a jar for a mess free and easy to serve pudding.

For me, a family picnic’s all about feeling the grass between your toes and enjoying time spent with your loved ones. There’s nothing more precious than people, so this race day, take the time out to host your very own extraordinary picnic with a difference!
