Sally Lane’s Mama’s Fried chicken
The original recipe was given to me by a friend 23 years ago. I was suffering from serious Post Natal Depression and she very kindly brought a bowl of it out to Rangiora, along with some peeled potatoes in water! I was in total disbelief and so grateful for her thoughtfulness, to bring such a nourishing dish to a young family that was struggling.
Fast forward a few years, when I would ask the children what they would like for dinner, Tommy would always say “Mama’s Fried Chicken”, we all knew what he meant. It’s my go to recipe when all the kids come home, they LOVE IT! Can be served hot or cold, whichever way it is always good.
3 chicken breasts (skin removed) or 12 chicken drumsticks
½ cup plain flour
2 tsp dry chicken stock
2 cup dried breadcrumbs
3 tsp Chinese five spice
2 eggs, beaten
1 cup oil
1 tbsp butter
Preheat oven to 180oC.
If using chicken breasts, slice the chicken thickly on the diagonal into 4 or 5 pieces.
In a bowl put flour and chicken stock and mix.
In another bowl, mix dry breadcrumbs and Chinese five spice.
Beat the 3 eggs into a third bowl.
Dip a chicken strip/drumstick into the flour, then the egg mixture and then coat the chicken in the breadcrumbs. Set aside until all the chicken is done.
Heat ½ cup of oil in fry pan with the butter. Cook chicken in batches adding more oil when required until golden brown and put into an oven dish.
Put in oven until cooked through, about 15 minutes.
Can also be done with schnitzel.
